Beef Goulash

Ingredients:

– 1 1/4 lb lean beef chuck for stew, cut in 3/4-inch pieces
– 1 lb carrots, sliced (about 4 cups)
– 3 cups thinly sliced onions
– 3 cups thinly sliced cabbage
– 1/2 cup red wine
– 1 1/2 cups water
– 1 can (6 oz) tomato paste
– 1 pkg dry onion-mushroom soup mix from 1.8 oz box
– 1 Tbsp paprika
– 1 tsp caraway seeds
– 1 cup reduced-fat sour cream

Directions:

– Put all ingredients except sour cream into a 4-quart slow cooker and mix well.

– Cover and cook for 8-10 hours on low until beef is tender. Turn cooker off and add sour cream, stir until well blended.
